Allisons Fresh Salsa


4 cups chopped tomatoes (blanched and skins removed)
1 ½ cups white chopped onion
¾ tsp. sugar
1 Anaheim pepper finely chopped
1-2 jalapeno peppers finely chopped (add more if you like it hotter)
Fresh lime juice from 1 lime
½ bunch finely chopped cilantro
1-2 tsp. salt
1-2 garlic cloves minced
1-6 oz can tomato paste

To blanch tomatoes you bring a pot full of water to a boil and add the tomatoes.  Watch for the skins to start splitting (this takes anywhere from 1-2 minutes) immediately take them out of the water and put into a bowl that has been filled with  ice cold water.  The skins will generally slip right off.  Chop the tomatoes or finely dice them.  I find that a Pampered Chef chopper has worked the best for me.  I have been using a little Ninja mixer lately and it purees the tomatoes a little too much.  But you may like it this way.  My husband likes it chunky.  Add the rest of the ingredients and enjoy with your favorite tortilla chips.
